I don't think this new journey will be all together difficult for me. So far I eat what I cook for my family minus the meat. I have been adding an extra vegetable to the menu and thus far added cooked legumes to cover my protein needs. Nothing special, just things my family enjoy too. Although I am not strict, not yet, I am okay with anchovies in my Worcestershire sauce and so on. I know I need to visit meat substitutes and tofu. I need to do this without taking away from the quality of meats I buy for my guys or add grossly to out food budget.
